Sushi restaurants are everywhere in Japan, from small shops to big hotels. Second, tempura. Tempura is fish or vegetables in a light, crispy coating. Cooks fry them in hot oil for only a short time. The most popular tempura is shrimp, but sweet potato and eggplant are also delicious. People often eat tempura with a special sauce or with salt. Third, ramen. Ramen is a noodle soup, and every region in Japan has its own type. The soup can be salty, soy-sauce-flavored, or miso. Ramen is usually cheap and quick, so it is a perfect lunch for busy people.
