When a dish travels, it rarely arrives unchanged. The chicken tikka masala served in British curry houses was, by most accounts, invented in Britain rather than imported from the Indian subcontinent; the California roll bears only a distant resemblance to anything eaten in Tokyo. Such transformations are often dismissed as corruptions of an original—debased copies that betray a "real" cuisine waiting somewhere across the sea. Yet food anthropologists increasingly argue that this notion of a fixed, pristine original is itself a fiction. Cuisines have always borrowed, blended, and mutated; the tomato, now inseparable from Italian cooking, did not reach Europe until the sixteenth century. The debate turns on a slippery word: authenticity. Diners pay a premium for it, guidebooks promise it, and chefs are alternately praised and condemned in its name. But authenticity, on closer inspection, describes less a property of the food than a relationship between the eater and a story about origins. A bowl of ramen prepared by a third-generation immigrant may be denounced as inauthentic by a tourist who has never left home, while the immigrant regards it as the truest expression of a living tradition. The label, in other words, polices who is permitted to claim a heritage—and that policing often falls hardest on the very communities who carry the tradition forward. None of this means that adaptation is harmless. When a multinational chain strips a regional dish of its complexity and sells a sanitized version worldwide, something genuine can indeed be flattened. The danger lies not in change as such but in who profits from it and whose story is erased. The more interesting question, then, is not whether a dish is authentic but what its journey reveals: the migrations, the inequalities, and the improvisations that every plate quietly records.
