壁は技術・経済・文化の3層
①技術と経済: 巨大なバイオリアクター、医薬品級の無菌、高価な細胞培養液。
価格は下がったが従来の肉と競えない ②環境: 施設の電力が削減分を打ち消す可能性 ③文化: 「不自然」だと感じて拒む消費者が相当数。
therefore win not only a scientific argument but a cultural one（科学的な議論だけでなく文化的な議論にも勝たねばならない）。
「愚行」ではないという反論
Skeptics may be right that the obstacles are formidable; they are wrong, though, to dismiss the enterprise as folly.（障害が大きいという点で懐疑派は正しいかもしれないが、事業を愚行と切り捨てるのは誤り）。
根拠は Every transformative food technology—pasteurisation, refrigeration, frozen vegetables—was once greeted with suspicion before becoming invisible through familiarity.（低温殺菌・冷蔵・冷凍野菜も当初は疑われた）です。
つまずきやすい所
